What You CRAVE
Our office, Elan Family Wellness Centre, is hosting an event for my CRAVE Business group tomorrow night. You can come! And when you see what we're serving, it may persuade you.

In keeping with our food challenge this month, I thought the food that we offer should be consistent. So I came up with what I thought were a good couple of suggestions.
Pecan Shortbread Cookies
1/2 c. butter
1/8 tsp stevia
1 TBSP vanilla (I used less)
2 1/2 c. almond flour
1/4 tsp salt
1/4 tsp baking soda
1 c. chopped pecans
- In stand mixer, beat together butter and stevia. Add vanilla and mix again.
- Combine all dry ingredients
- Combine butter mixture with dry ingredients
- Use parchment paper and roll dough into a 2 1/2 diameter log
- Freeze for 1 hour
- Slice into 1/8" slices
- Bake 350 degrees 10-15 min
And our old standby:
Black Bean Brownies
1 can drained and rinsed black beans
1/4 c. cocoa
3 eggs
1 tsp vanilla
3 TBSP coconut oil
3/4 c. honey
1/4 tsp salt
1/2 c. chocolate chips
- Mix all (except chocolate chips) together in food processor and blend until smooth.
- Mix in chocolate chips.
- Pour into lightly greased (coconut oil) 8x8 baking dish
- Bake for 30 min at 350.
- Let cool & store in fridge.
I would attach a picture, but it's still baking.
Accompany with a fruit tray and some herbal teas-hopefully yummy and healthy!

ReplyDeleteThank you! Hosting was lovely. And I'm a fan of the pecan shortbread. Yum! I like savoury and while they were sweet, they weren't too sweet. Appreciate your kindness with baking these great goodies -- and keeping to your own mission.
ReplyDeleteI'm sorry I stole a black bean brownie to test drive on my husband last night. By the time it got home, it looked so squished and unloved...but he still enjoyed it! Thanks for the sweet trickery with the healthy recipes and for hosting. Very enjoyable.
